Apple Almond Date Baked Oatmeal

I had never heard of baked oatmeal before the lovely Sweet Happy Pie did a fabulous blog post about it. It sounded so good I just had to try it! I promptly went into the kitchen to see what I had available. If you know me and my cooking/baking habits I can't just leave a recipe as is- I always tweak it- they might be small tweaks but I never leave well enough alone! This recipe was no different. The first attempt was delicious! It wasn't what I expected at all- I thought it would be like those Quaker oatmeal squares, dense and solid but this is a bit spongy and kind of chewy- which doesn't make it sound appealing at all, but it's really good! If you check out Sweet Happy Pie's version you'll see right away where I made my changes- she makes some really delicious suggestions for flavors too, so I encourage you to head on over to her blog and check it out! She includes the link to the original recipe that she found and also tweaked- great minds think alike! Oh and she also has this most amazing link for the fanciest popcorn balls I've ever seen- sure to be a future blog post!!!



Okay so here's my version! Apple Almond Date Baked Oatmeal. Gluten free and dairy free, but not vegan- (if you can make this work with an egg substitute then you're golden!)

What you'll need:

2 cups old fashioned rolled oats
1/4 cup brown sugar
1 tsp baking powder
1/2 teaspoon salt
1/2 cup almonds- I did blanched almond slivers
1 1/2 cups of chopped apples
4-  chopped dates. 
1/2 teaspoon cinnamon (I always use saigon cinnamon)
pinch of nutmeg

2 cups Vanilla Coconut milk
2 eggs
3 tablespoon olive oil
1 teaspoon Vanilla



What you do: 

1. Preheat oven to 375 degrees (my oven temp is off so I do it at 400 degrees)
coat a 9 x 13 pan with oil or cooking spray- I use an olive oil sprayer

2. In a bowl mix all dry ingredients plus fruit-(please reserve half the fruit and nuts to sprinkle on top after wet ingredients are poured on). pour into pan and spread evenly.

3. In a separate bowl mix the wet ingredients. Gently pour over the dry ingredients, shaking the pan a bit to make sure everything is evenly distributed. Sprinkle the remaining fruit and nuts (or whatever you delicious filling/flavor is). I sprinkled a small amount of brown sugar on top and into the oven it went!

4. Bake for around 35 minutes or until the top is golden brown. (I find that I have to bake mine for about 40-45 minutes- this may be due to the edition of the coconut milk)

Cut yourself up a square and prepare to smile!
