Mexican Mocha Cookies- oooooh baby!
As usual I didn't follow the original recipe completely- mostly it was on purpose but I'll have to admit a big chunk of it was an accident! whoops!! So these cookies are nothing like the original recipe. They taste good, I'm saying that's all that matters- am I right?!
What you need:
1 1/2 cups all purpose flour
2 tablespoons Mocha Instant Coffee powder
1 teaspoon baking powder
1/2 teaspoon salt
3/4 teaspoon cinnamon
1/2 cup butter (I use salted sweet cream)
3/4 cup granulated sugar
1/4 cup firmly packed brown sugar
1 large egg
2 teaspoons vanilla extract
2 cups semi sweet chocolate chips.
What you do:
Preheat oven to 375 degrees.
Combine dry ingredients in a mixing bowl (flour, mocha instant coffee powder, baking powder, salt and cinnamon), set aside.
In a mixer (or with a hand held mixer) cream butter and both sugars. Add egg and vanilla. Mix well. Carefully begin adding the dry ingredient (flour mixture from above). Once dry ingredients are mixed in, fold in the chocolate chips.
I line my cookie sheets with parchment paper before adding my dough balls. I made pretty generous sized dough balls, spacing them about 2 inches apart on the cookie sheet.
Bake for 12-13 minutes, depending on your oven. I baked mine for 12 minutes and I'm wish I had done 11 minutes instead. My oven isn't the best- one rack gets more heat than the other so the cookies on the bottom rack baked a bit more than the rack above.
Transfer to cooling rack and enjoy!!
