Holiday Treat- Chocolate Peanut Butter Bars
These are so ridiculously easy, you could have an endless supply! Seriously my friends- there is nothing to it!!! You will be the toast of every party, the envy of every family gathering, the savior of every co-worker- the. queen. of. the. dessert. table! (oh and did I mention these are vegan and gluten free- everyone will be happy!!)
Let's get down to the nitty gritty and discuss these nuggets of goodness! If you remember nothing else, remember this: by no means, and I mean by pain of death, do you substitute the coconut oil! Now, I know some of you are going to groan about the calories or the fact that it's a pain to get out of the jar- but it simply won't be the same recipe without it! So, make sure that organic coconut oil is on your grocery list or fuggedaboutit!
What you'll need:
1 cup peanut butter
2/3 cup honey
1/2 cup of coconut oil
2 cups oats
1 1/4 cups chocolate chips
3/4 cup dried cranberries.
(of course you can add other items like nuts or dried cherries if you wish- the sky's the limit here!)
What you do:
are you ready for this?! so darn simple!
In a medium saucepan, heat the honey, coconut oil and peanut butter until melted and combined. Remove from heat and add, oats, chocolate chips and cranberries. Mix til chocolate chips are melted.
pour into a 9x13 pan, spread evenly and refrigerate to set- about 2 hours.
EAT!
(*I have no idea where I got the original recipe from. I found it online sometime last year and hand wrote it out- I never made a notation of where I got it from- whoops!!!)
