Baked Sweet Potato With Apples
Need a new side for your Thanksgiving feast? I found this recipe in a magazine not long ago and I've been thinking of ways to tweak it. Sweet potatoes are sweet enough on their own, but when you add candied walnuts it can take it over the edge unless you want it for dessert. Enter the delicious smoked paprika and cayenne pepper to take it to another level. Who doesn't want a little heat with their sweet?
What you will need:
3-4 sweet potatoes
1 tsp butter
1 tsp brown sugar
salt and pepper to taste
pinch of cayenne pepper
pinch of paprika
1/4 cup walnuts chopped and toasted
2 Granny Smith green apple, cored and diced
1 tsp lemon juice
1 tbsp chopped chives
What you do:
Preheat oven to 350 degrees F. Bake sweet potatoes for 35-45 minutes until potatoes are tender and skin is crisp.
While potatoes bake, melt butter in a small saucepan; stir in brown sugar, pepper, pinch of cayenne, salt and walnuts, stirring often, until mixture caramelizes. Remove nut mixture to a parchment paper covered wire cooling rack. Cool completely, break apart.
Toss apples in lemon juice, chives and salt and pepper to taste.
Cut potatoes in half lengthwise; season with salt, pepper and pinch of paprika. Top potatoes with apples and walnuts. Best eaten straightaway.
